I found this recipe online at www.thegraciouspantry.com, they have great clean eating recipes. For me there is only two of us so I actually halved the recipe, I found the second time I made it was able to half the cheese and the garlic powder and I used grape tomatoes (which are my favorite). Make sure you use the fresh basil it makes the dish! In my picture with the recipe I just cooked a chicken breast with some Italian Seasoning and pepper in a small amount of coconut oil. DELICIOUS! This will be a great summer dish with grilled chicken.

Directions

  1. Follow package directions to cook the quinoa, but substitute the water with chicken broth.
  2. When done, fluff with a fork and allow to cool enough so the cheese won’t melt when you add it.
  3. Stir in the garlic powder and parmesan cheese.
  4. Add the tomatoes and fresh basil.
  5. Stir well and serve.
