  • 2 1/2 lb baking potatoes peeled, and cut into same size chunks Salt as needed
  • 8 Tbsp. unsalted butter cut small pcs, at room temperature
  • 1/2 c. heavy cream brought to a boil
  • 1/2 c. raw garlic minced Freshly-grnd white pepper to taste Freshly-grated nutmeg to taste
  • 1 Tbsp. minced fresh parsley for garnish

Directions

  1. In a saucepan, cook the potatoes and raw garlic in lightly salted water to cover, till tender. Drain well.
  2. Mash the potatoes through a food mill, or possibly with a potato masher, into a stainless steel bowl.
  3. In a small saucepan, heat butter and cream till butter has melted. Add in salt, pepper and nutmeg.
  4. Spoon mashed potatoes into warmed serving bowl and sprinkle with minced parsley. Serve immediately.
  5. This recipe yields 5 to 6 servings.
  6. Comments: If you love fluffy mashed potatoes and you love garlic then you'll love this dish. The difference between this recipe and common or possibly garden garlic mashed potatoes lies in the roasted garlic. It makes a world of difference to the final flavor, adding sweetness and depth which you cannot get from fresh garlic.
