Garlic Cheddar Chicken for Two

The original recipe was for 8 servings but I scaled it down for the two of us. The original recipe used regular bread crumbs and cheddar cheese.

Ingredients

  • 2 T Butter, melted
  • 1 Clove garlic, minced
  • 3 T Italian style bread crumbs
  • 2 T Parmesan cheese, grated
  • 6 T Colby-Jack cheese, shredded
  • 1/12 t Dried parsley
  • 1/12 t Dried oregano
  • 1/12 t Pepper
  • 1 pinch Salt
  • 2 ea Boneless skinless chicken breast halves (pounded thin)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Melt the butter in a saucepan over low heat, and cook the garlic until tender, about 5 minutes.
  3. In a shallow bowl, mix together the Parmesan cheese, shredded Colby-Jack cheese, italian bread crumbs (or plain), parsley, oregano, salt and pepper.
  4. Dip each chicken breast in the melted garlic butter to coat, then press into the bread crumb & cheese mixture. Arrange the coated chicken breasts in a 13x9-inch baking dish. Drizzle with remaining butter and top with any remaining bread crumbs.
  5. Bake about 30 minutes or until the chicken is no longer pink and juices run clear.
