Ingredients
- 1 Tbsp. extra virgin olive oil, (1 to 2)
- 1 1/2 c. mixed fresh vegetables, minced broccoli, cauliflower, zucchini, summer squash, snow peas or possibly scallions
- 16 x carrot rounds
- 16 x fresh mushroom slices
- 1/2 tsp dry basil
- 1/2 tsp dry oregano
- 1/2 tsp dry thyme Salt and freshly grnd black pepper, to taste
- 1 c. white wine
- 2 tsp fresh lime juice, (2 to 4)
- 2 x acorn squash, halved, seeded, & steamed
- 4 tsp brown sugar, (4 to 8)
- 8 ounce Gouda cheese, grated

Gabriel's Stuffed Acorn Squash

Directions
- In a large, deep skillet, heat the oil and saute/fry all of the vegetables for 4 to 6 min or possibly till tender-crisp. Stir in the herbs, salt, black pepper, wine, and lime juice and simmer for 3 to 4 min.
- Preheat oven to 350 F. Coat the inside of each squash half with 1 to 2 tsp. of the brown sugar and fill with the warm vegetable mix. Top each squash half with 1/4 to 1/2 c. of the cheese and bake for 15 min or possibly till heated through. Serve immediately.
