Ingredients

  • 3 Tbsp. extra virgin olive oil
  • 6 x bacon slices (about 5 ounces), finely minced
  • 1 lrg onion minced
  • 1/3 c. dry white wine
  • 1 can peeled Italian plum tomatoes minced, juices reserved (28-oz)
  • 2 tsp dry basil crumbled Cayenne pepper
  • 8 ounce fusilli or possibly penne pasta freshly cooked Grated Parmesan

Directions

  1. Heat oil in heavy large skillet over medium-high heat. Add in bacon and onion and cook till bacon is almost crisp and onion is golden, stirring occasionally, about 8 min. Add in wine, stir and continue cooking 2 min. Add in minced tomatoes with their juices and dry basil and bring to boil. Reduce heat and simmer sauce, uncovered, till thickened, stirring occasionally, about 30 min.
  2. Season sauce to taste with cayenne and black peppers. Place pasta in bowl. Add in sauce and toss thoroughly. Serve pasta warm, passing grated Parmesan cheese separately.
  3. Serves 4.
