  • 1 c. halved red seedless grapes
  • 1 c. well liquid removed canned pineapple chunks
  • 2/3 c. thinly sliced celery
  • 1/2 c. Orange Curry Mayonnaise
  • 1/4 c. toasted slivered almonds
  • 1 c. light or possibly fat-free mayonnaise
  • 1/2 c. orange juice concentrate, thawed*
  • 2 tbsp Equal® Spoonful**
  • 2 to 3 tbsp reduced-fat lowfat milk
  • 1 1/2 tsp curry pwdr

Directions

  1. 25% calorie reduction from traditional recipe.
  2. Put together all ingredients, except almonds. Chill, covered, 1 to 2 hrs to allow flavors to blend. Just before serving, sprinkle almonds over top of salad.
  3. Put together all ingredients, stirring with a wire whisk till blended. Chill, covered, 1 to 2 hrs to allow flavors to blend.Makes 6 servings.
  4. * Make remainder of concentrate into orange juice.
