Ingredients

  • COUSCOUS 50 GR
  • EGGPLANT 100 GR
  • DRIED APRICOT, FIGS, DATES 20 GR
  • CHOPPED PARSLEY 10 GR
  • DICED ROASTED PEPPERS 30 GR
  • BALSAMIC REDUCTION 1 CL
  • VEGETABLE STOCK 10 CL

Time: 10 minutes prep, 10 minutes cook
Servings: 1
 

Directions

  1. Steam the coscous for 15 minute then leave to coolCut the aubergines in slices about 1 cm thick sprinkle with salt and keep aside for 5 minutes.
  2. Car grill the eggplan, then cut each slice in half.
  3. Check yhe seasoning of the couscous .
  4. Caramelized the diced red peppers with the balsamic reduction.
  5. Serve the vegetable stock on the side
