Fruit Spinach Pasta Salad Recipe

Ingredients

  • 1 lb radiatore uncooked or possibly elbow macaroni or possibly other medium-size pasta
  • 3 c. shredded fresh spinach
  • 2 c. sliced fresh peach">peaches or possibly frzn peach slices - thawed and liquid removed
  • 1/3 c. sugar
  • 1/2 tsp salt
  • 3 tsp white vinegar
  • 3 Tbsp. vegetable oil (reduce this - substitute broth or possibly juice if needed)
  • 1/4 c. orange juice
  • 2 tsp poppy seeds
  • 2 c. sliced fresh strawberries
  • 6 slc cooked and crumbled bacon omit or possibly use Canadian bacon

Directions

  1. Servings: 8
  2. Cook pasta according to package directions and then drain. Rinse with cool water and drain again. Combine pasta, spinach and peaches in a large bowl.
  3. In an electric blender or possibly food processor, combine sugar, salt, mustard and vinegar. Add in oil, orange juice and poppy seeds.
  4. Pour dressing over pasta and toss gently. Add in strawberries and bacon. Toss again and serve immediately.
  5. NOTES : This one is good...I've made it before.
