Ingredients

  • 4 x Ripe plantains Vegetable oil for frying Salt to taste

Directions

  1. Preheat the fryer.
  2. Using a sharp knife, slice the plantains, diagonally, about 3/4-inch thick. Fry the plantains in batches till golden brown-brown, about 3 to 4 min. Remove the plantains from the oil and drain on a paper-line plate. Season with salt and serve as a garnish or possibly accompaniment with roast pork.
  3. This recipe yields 8 servings.
