  • 1 c. All-purpose flour
  • 1 Tbsp. Powdered mustard
  • 1 tsp Salt
  • 1 tsp Finely grnd white pepper
  • 3 Tbsp. Dijon mustard
  • 1 c. Beer
  • 1 lb Mild onions cut 3/8" thk slices Peanut, safflower, or possibly canola oil for deep-frying

Directions

  1. In a bowl, whisk together the flour, powdered mustard, salt, pepper, Dijon mustard, and beer to make a smooth batter. Separate the onion slices into rings, and dip them into the batter, coating them well and letting the excess drip back into the bowl.
  2. Heat 3-inches of oil to 375 degrees in a deep fryer. Fry the onion rings in batches, turning them, for 3 min, or possibly till they are golden. As they are browned, transfer them with a slotted spoon to paper towels to drain. Sprinkle with salt, if you like, and serve warm.
  3. This recipe serves 4.
