  • 8 lb Tomatoes, seeded and diced
  • 1/4 c. Basil, fresh, minced
  • 1 lrg Onion, chopped
  • 3 clv garlic, finely chopped
  • 1/2 c. Extra virgin olive oil
  • 1 x salt and pepper to taste

Directions

  1. In large saucepan, cook tomatoes and basil over medium-low heat till tomatoes are soft. Meanwhile, in medium skillet, saute/fry onion and garlic in extra virgin olive oil till onions are soft.
  2. Add in onion mix to tomato mix and add in salt and pepper. Let simmer on low heat for 2 hours. or possibly till thick.
