Fresh Tomato and Mozzarella Tarts Recipe

A great appetizer that everyone will love, I like to make them for a light dinner when we're really not that hungry but want more than a snack.

Directions

  1. Thaw pastry sheet. Cut into 2x2 squares, experiment with shapes, circles are easy when you use a round cutter
  2. Place the cut pieces of pastry onto a parchment paper lined baking sheet. Cover the pastry with another sheet of parchment paper and top with another baking sheet for weight to hold down the puff pastry from puffing too much.
  3. Bake according to package directions.
  4. Spread about a teaspoon full of olive tapenade onto each baked pasty piece.
  5. Thinly slice the tomato and the mozzarella and layer it lightly on the tapenade.
  6. Chop the fresh basil and generously scatter over the tomato and cheese
  7. Finish with chopped Kalamata and Green Olives over top
  8. Bake for about 3 minutes in 450 degree oven, just till cheese melts
  9. Drizzle with Olive Oil, Balsamic Vinegar and a sprinkle of Truffle Salt.
