Fresh Pumpkin Bread

Made with homemade pumpkin puree, this is a one loaf recipe that easily doubles.

Will freeze.

Ingredients

  • 2 beaten eggs
  • 1 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup melted butter or oil or 1/4 cup butter or oil and 1/2 cup applesauce
  • 1 cup fresh pumkpin puree, or canned unsweetened
  • 1 3/4 cups flour
  • 1/4 cup water
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. pumpkin spice or 1/2 tsp. each cinnamon, allspice, and nutmeg
  • pinch cloves
  • optional: pecans or walnuts

Directions

  1. Heat oven to 350 F.
  2. Combine the wet ingredients.
  3. Add dry ones, mix well.
  4. Grease a 9x5 bread pan.
  5. Pour batter into the pan, bake 50 minutes, check for doneness with a toothpick.
  6. Remove when done and put on a cooling rack.
  7. Serve warm with butter or apple butter.
