Ingredients

  • 3 1/2 c. Diced peeled peaches, (2-1/2 pounds)
  • 1/4 c. Diced red onion
  • 2 Tbsp. Finely minced fresh cilantro
  • 1 Tbsp. Chopped seeded jalapeno pepper
  • 2 Tbsp. Rice vinegar
  • 1 tsp Lemon juice
  • 1 x Clove garlic, chopped

Directions

  1. Combine all ingredients in a bowl, and stir well. Cover and chill.
  2. Yield:3-1/2 c. (serving size: 1/4 c.).
  3. Serving Ideas : Serve with pork tenderloin.
