Ingredients
3 1/2 c. Diced peeled peaches, (2-1/2 pounds)
1/4 c. Diced red onion
2 Tbsp. Finely minced fresh cilantro
1 Tbsp. Chopped seeded jalapeno pepper
2 Tbsp. Rice vinegar
1 tsp Lemon juice
1 x Clove garlic, chopped
Directions
Combine all ingredients in a bowl, and stir well. Cover and chill.
Yield:3-1/2 c. (serving size: 1/4 c.).
Serving Ideas : Serve with pork tenderloin.
