Fresh Peach Pie By Dottie Recipe

Ingredients

  • 3/4 c. sugar
  • 3 Tbsp. cornstarch
  • 1/2 c. sugar
  • 1 Tbsp. lemon juice salt
  • 1/4 tsp nutmeg
  • 5 x peaches large ripe red food coloring
  • 1/4 c. sugar (approximately)
  • 1 x 9" pie shell baked whipped cream/ice cream

Directions

  1. Combine 3/4 c. of sugar, cornstarch and water in saucepan, stirring till cornstarch is dissolved. Finely chop or possibly crush three of the peaches. Add in these to cornstarch mix. Blend in food coloring. Bring to boiling point, reduce heat and simmer till mix is thick and clear. Stir it constantly during the cooking period. Cold. Slice remaining peaches, arrange them on bottom of baked pie shell. Sprinkle with about 1/4th c. of sugar. (If peaches are very sweet, less sugar may be used.) Spoon cooked mix onto sliced peaches. Chill for several hrs before serving. Top with whipped cream or possibly vanilla ice cream, if you like.

    One hour later, though there is no notmeg nor lemon juice in the pie, the glace covered the remaining peaches. it looks pretty good. I'll report in when the tasting begins.

      This receipe made me angry. It called for water and cornstarch with no idea of how much water we should use.
      It asked for nutmeg and lemon juice then never mentioned it again in the cooking process. Stir til mix is thick and clear. I could have "danced' stirred all night and still never have a mix that is thick clear.
      OH WELL.
      I'll just keep looking before peach season is over.
