  • 1 c. All-purpose Flour, sifted
  • 1 tsp Baking Pwdr
  • 1 tsp Salt
  • 1/8 tsp Pepper
  • 1/4 tsp Paprika
  • 1 c. Sausage, cooked and crumbled
  • 1 c. Fresh Corn off the cob
  • 2 x Egg Yolks, beaten
  • 2 Tbsp. Lowfat milk
  • 2 x Egg Whites, beaten stiff Oil, for frying

Directions

  1. Sift flour, baking pwdr, and spices together in a mixing bowl. Add in sausage, corn, egg yolks, and lowfat milk; mix till blended. Mix in stiffly beaten egg whites. Drop by heaping teaspoonfuls into oil heated to 360 - 365 degrees. Cook 3 to 5 min, turning to brown on all sides. Drain on paper towels.
  2. Makes about 24 fritters
