Ingredients

  • 2 eggs
  • 1 cup vegetable oil
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3 Granny Smith apples - peeled, cored and chopped
  • Glaze:
  • 4 tablespoons unsalted butter, cut into chunks
  • 1/2 cup brown sugar
  • 1/3 cup (plus more as needed) heavy cream
  • 1 teaspoon vanilla
  • 1 cup powdered sugar

Here's a wonderful Fall cake that everyone in my family just loves. It has a crunchy almost cookie like crust, an incredibly moist interior, and plenty of apples. The caramel glaze takes it over the top. All in all, it's a homey delicious cake that is packed with all the flavors of Fall. With all those healthy apples I tell myself this is actuall health food.....

Fresh Apple Cake with Caramel Glaze

Ingredients:

Cake:

  • 2 eggs
  • 1 cup vegetable oil
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3 Granny Smith apples - peeled, cored and chopped
  • Glaze:
  • 4 tablespoons unsalted butter, cut into chunks
  • 1/2 cup brown sugar
  • 1/3 cup (plus more as needed) heavy cream
  • 1 teaspoon vanilla
  • 1 cup powdered sugar

Instructions:

1. Preheat oven to 350 degrees. Spray a 12 cup bundt pan with cooking spray.

2. In a medium bowl add sugar, oil, eggs and vanilla and beat well.

3. In another bowl combine flour, baking soda and cinnamon. With an electric hand mixer, slowly add flour mixture to sugar mixture. Add apples and mix in. Spread batter into prepared pan.

4. Bake in preheated over for about 55 minutes or until cake tester inserted in the center o cake comes out clean. Allow cake to cool completely.

5. Meanwhile prepare glaze.

6. In a medium saucepan add butter, brown sugar, and cream. Over medium heat bring to a full rolling boil, stirring constantly. Boil for one minute exactly then remove from heat.

7. Allow the pan to cool for a few minutes then add vanilla and whisk in powdered sugar. If glaze becomes to thick thin with a bit of cream.

8. Pour quickly over cooled cake.
