Ingredients

  • 3 Tbsp. Extra virgin olive oil
  • 4 ounce Bacon diced
  • 1 c. Minced carrot
  • 1 c. Minced onion
  • 1/4 c. Flour
  • 6 1/2 lb Fresh tomatoes skinned, seeded, and diced
  • 1 Tbsp. Minced garlic
  • 4 c. Light stock
  • 1 1/2 Tbsp. Sugar Salt to taste Freshly-grnd black pepper to taste

Directions

  1. In a large sauce pot heat oil, and add in the bacon and cook till slightly crispy. Add in the carrots and onions, cover and slowly cook for 20 min. Add in a dusting of flour to the vegetables and cook till the flour turns golden brown. Add in the tomatoes, garlic, and stock. Bring to a boil, reduce the heat and simmer for 2 hrs. Add in the sugar and season with salt and pepper. Carefully puree with a hand mixer and strain through a fine sieve.
  2. This recipe yields 1 1/2 to 2 qts of sauce.
