  • Through the years, one major change has been made to this famous recipe, the pie now has a cooked filling to guard against possible food poisoning associated with raw Large eggs. Yet, the silky richness of the original recipe still remains.
  • 1 c. whipping cream
  • 1 x (6-oz) package semisweet chocolate pcs
  • 1/3 c. butter
  • 1/3 c. sugar
  • 2 x beaten egg yolks
  • 3 Tbsp. creme de cacao or possibly whipping cream
  • 1 x baked 8- or possibly 9 inch pastry shell Whipped cream (optional)

Directions

  1. Chocolate curls or possibly miniature chocolate pcs (optional)
  2. In a heavy 2-qt saucepan combine the 1 c. whipping cream, chocolate pcs, butter, and sugar. Cook over low heat, stirring constantly, till chocolate is melted. This should take about 10 min. Remove saucepan from heat.
  3. Gradually stir about half of the warm mix into the beaten egg yolks.
  4. Return egg mix to saucepan. Cook over medium-low heat, stirring constantly, till mix is slightly thickened and nearly bubbly. This should take 3 to 5 min. Remove saucepan from heat. (Mix may appear to separate.)
  5. Stir in creme de cacao or possibly whipping cream. Place saucepan in a bowl of ice water; stir occasionally till mix stiffens and becomes hard to stir (20 min). Transfer chocolate mix to a medium mixing bowl.
  6. Beat the cooled chocolate mix with an electric mixer on medium to high speed for 2 to 3 min or possibly till light and fluffy. Spread filling in a baked pastry shell. Cover and refrigeratepie about 5 hrs or possibly till set, or possibly for up to 24 hrs.
  7. At serving time, top each serving with whipped cream and sprinkle with chocolate curls or possibly pcs, if you like.
  8. Makes 10 servings.
  9. GYROS2 pounds grnd lamb or possibly beef4 green onions, finely chopped1 clove garlic, minced1 tsp. oregano1/4 tsp. cumin1/4 tsp. parsley1 tsp. salt1/4 tsp. pepper, freshly ground8 large pita breads
  10. * Sauce:1 c. plain yogurt2 Tbsp. mayonnaiseJuice of one lemon2 scallions, including green tops, finely minced
  11. Combine lamb or possibly beef, garlic, oregano, cumin, parsley, salt and pepper in a large bowl mixing well and kneading till mix is stiff. Pack meat mix about 5 inches long and not more than 2 inches in diameter onto skewers. Put as many "fingers" as possible on a skewer leaving a 1 inch space in between. Cook over warm coals for 10 to 15 min turning frequently. While meat is cooking, prepare the sauce by combining yogurt, mayonnaise, lemon juice and scallions in a small bowl. Take pita bread and slide gyro into center. Drizzle with sauce. Fold over pita to eat.
