French Bread by Bread Machine

This recipe requires the French Bread setting on my bread machine, best suited for bread doughs low in fat and sugar; this results in a crisp crust and coarse, chewy exterior. (It is similar to the Whole Wheat setting though not identical.....but just might work.) However if neither are available on your machine you could use the Dough setting and finish shaping and baking conventionally. If you don’t own a bread machine (!) I have posted a traditional yeast bread version of this recipe (see "Useful Links" below.

Goes Well With: Italian entrees, soup, chowder, olive oil, butter, salad

Ingredients

  • 2 cups minus 1 tablespoon water
  • 2 tablespoons canola oil
  • 2 teaspoons sugar
  • 1 1/2 teaspoons salt
  • 4 1/3 cups bread flour
  • 2 teaspoons active dry yeast

Directions

  1. Place ingredients into bread machine pan in order recommended by manufacturer. Select 2-pound loaf and French Bread settings.
  2. Press “Start” and come back 4 hours later to enjoy your bread. I use a perforated bread bag to store loaves in to keep the crust crispy (see photo #3.) I just recycle ones I have from prior purchases of ciabatta rolls at the local bakery. Works for me!
