Ingredients

  • 1 lrg -or possibly-
  • 2 sm Eggplants
  • 1/2 tsp Salt Black pepper
  • 2 c. Well liquid removed tomatoes, mashed
  • 1/2 c. Chopped onions
  • 2 x Large eggs, well beaten
  • 2 c. Corn bread crumbs Lowfat milk Grated cheese

Directions

  1. Peel, dice and boil eggplant till tender. Drain. Mash and add in salt, pepper, tomatoes, onions, Large eggs and corn bread crumbs. Pour into large casserole and add in sufficient lowfat milk to cover. Top with cheese. Bake at 375 for 30 min or possibly till cheese is bubbly.
