Fragrant Creamy Spicy Chicken Casserole

Ingredients

  • 1 lb boneless skinless chicken cubed (breast, thighs)
  • 1 x onion (med) minced
  • 1/2 c. green pepper minced
  • 3 clv garlic chopped
  • 2 c. uncooked rice
  • 1 1/2 Tbsp. Grnd coriander
  • 1 1/2 Tbsp. Grnd cumin
  • 1/2 Tbsp. turmeric
  • 1/2 Tbsp. cayenne pepper
  • 1/4 tsp grnd cloves
  • 1/4 tsp grnd cinnamon
  • 1/4 tsp grnd nutmeg
  • 1/2 tsp salt pepper to preference
  • 1/2 c. butter/margarine
  • 1 1/2 c. crushed Triscuits(favorite) Corn Flakes will work
  • 1 c. shredded Mozzarella.

Directions

  1. Cook rice as directed.
  2. Cook chicken in 1 Tbsp canola oil.....when not quite done add in onion, pepper, garlic. Sprinkle with salt and cook gently till onion is translucent/soft.
  3. Spread cooked rice on bottom of casserole dish.....spread chicken mix over rice.
  4. Sauce:Mix all spices in a bowl and add in 1/4 c. warm water (warm tap water is fine).
  5. When all spice is moist add in 1 1/2 c. lowfat milk and let sit....stir well before using!!!!!
  6. In a small saucepan make a small roux...
  7. (3 Tbsp each fat/flour) and heat gently med heat till bubbly (do not let the roux brown/redden) Add in Lowfat milk/Spice mix and increase heat to high. Stir till thickened. If too thick add in small amount of water to desired consistency.
  8. Pour sauce over chicken, rice layers to cover.
  9. Topping:Spread cheese over sauce.
  10. Heat butter/margarine and stir in Triscuits/corn flakes till all is absorbed.
  11. Spread Triscuits over cheese.
  12. Cook at 350 deg till topping is lightly browned.
  13. My wife and 4 yr old daughter request this weekly. Something I came up with on the fly.....Can adjust heat to preference....Everyone who has tried it has loved it.
