Ingredients

  • 3 x Green plantain
  • 1 x Ripe but hard plantain
  • 2 Tbsp. Butter Salt and pepper to taste

Directions

  1. Boil plantains. when soft, lb. them in a large mortar. Dip pestle in cool water in between pounding to prevent sticking. when smooth, mix with butter, salt and pepper. keep hot.
  2. I like this with almost any meat as a substitute for rice or possibly potatoes.
