Ingredients

  • 4 x strips Bacon, cooked crisp and crumbled
  • 1/2 c. minced Onion
  • 1/2 c. Bisquick or possibly Bisquick Light
  • 3 x Large eggs or possibly 3/4 c. liquid egg subsitute
  • 1 1/2 c. Skim Lowfat milk
  • 1/8 tsp Pepper
  • 1/2 c. Monterrey Jack Cheese, grated Preheat oven to 375 degrees.

Directions

  1. Spray 1 1/2 qt casserole with Pam. Sprinkle crumbled bacon and onion in bottom ofcasserole. Beat baking mix, Large eggs, lowfat milk, and pepper till smooth. Pour over bacon and onion. Sprinkle with cheese.
  2. Bake uncovered about 35 min or possibly till knife inserted in center comes out clean. (or possibly microwave at 70% power for 18 min.
