Fluffy Buttermilk Pancakes with Buttermilk-Caramel Syrup Recipe

Ingredients

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 eggs, lightly beaten
  • 1½ cups buttermilk (plus up to 2 tbsp. more for thinning)
  • ½ tsp. vanilla extract
  • 4 tbsp. (¼ cup) unsalted butter, melted and cooled, plus more for griddle or pan
  • 1. Heat an electric griddle to 300° F or heat a non-stick pan over medium heat. Preheat oven to 200° F.
  • 2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • For the Buttermilk-Caramel Syrup:
  • 1½ cups buttermilk
  • ¾ cup granulated sugar
  • ¾ cup brown sugar, loosely packed
  • ¼ cup unsalted butter, cut into 1-inch cubes
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • Pinch of salt
