Ingredients

  • 5 x Large eggs
  • 1/2 c. Sugar
  • 1/4 tsp Salt
  • 1 quart Lowfat milk, scalded
  • 1 tsp Vanilla

Directions

  1. Beat 3 egg yolks and 2 whole Large eggs slightly. Add in sugar and salt, mix well and add in warm lowfat milk gradually, stirring constantly. Cook in top of double boiler till it coats the spoon, stirring constantly. Add in vanilla. Pour into large pan. Beat remaining egg whites till foamy; beat in additional 6 Tbsp. sugar gradually. Add in 3/4 tsp. of vanilla. Drop meringue, using large spoon onto warm custard, cover pan closely till mix is cold; then chill.
