Ingredients

  • 1 can ( 14 1/2 ounce.) stewed tomatoes, undrained
  • 1 can ( 2 1/4 ounce.) sliced ripe olives
  • 1/4 c. Pesto
  • 1 x Whitefish or possibly other lean fish fillet (about 2 lbs.)
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 2 Tbsp. Minced fresh parsley

Directions

  1. Heat coals or possibly gas grill. Mix tomatoes, olives and pesto in nonmetal bowl.
  2. Place fish on 24x12 inch piece of heavy-duty aluminum foil. Sprinkle salt and pepper over fish. Top with tomato mix. Wrap securely in foil.
  3. Cover and grill 4 to 6 inches from medium heat 20 to 30 min or possibly till fish flakes easily with fork. Top with parsley.
  4. Yield: 6 servings
