Fish Tacos

Ingredients

  • 6 filets of white fish - I use Tilapia
  • Batter:
  • 1 cup bisquick
  • 1 egg yolk
  • Enough beer to make batter a medium consistency
  • Pat fish dry with a paper towel. Dredge through the batter. Fry in olive oil until both sides are browned. Place on cookie sheet and put in oven at 225 degrees while making other ingredients.
  • Sauce:
  • 1/2 cup sour cream
  • 1/4 cup diced red onion
  • 2 Tab diced pickled Jalapeno peppers
  • 2 Tab finely diced cilantro
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 lime - squeezed
  • salt and pepper to taste
  • Mix well and set aside
  • Shredded cabbage - lime squeezed over, salt added
  • Apple diced
  • Avocado diced
  • Whole Wheat Four Tortillas

  1. Place filet in whole wheat tortilla. Add sauce, cabbage, apple and avocado. ENJOY!
