Ingredients

  • 1/2 kg Fish with onions
  • 1 x Potato
  • 1 lrg Tin of apricots, strain and reserve both apricots and juice
  • 1 c. Vinegar
  • 2 tsp Chutney
  • 1/2 c. Sugar Few peppercorns
  • 2 x Cloves
  • 2 x Bayleaves
  • 2 x Onions sliced
  • 4 Tbsp. White vinegar
  • 2 Tbsp. Minced spring onion
  • 1 Tbsp. Soya sauce
  • 4 Tbsp. Sugar
  • 1/2 c. Water
  • 1 Tbsp. Maizena, ( corn flour)
  • 5 piece of preserved ginger in syryp with a little of the syryp

Directions

  1. Boil fish,onion and potato until cooked. Put through mincer, season and shape into balls, fry in warm oil.
  2. Sauce: Boil all of the above for 1/2 an hour. Crush 7 ginger biscuits and add in. Add in 4 Tbsp. tomato sauce(ketchup) 1 c. raisens and sultanas mixed. Boil for 1 more minute and pour over fish. Decorate with apricots.
  3. CHINESE STYLE FISH SAUCE
  4. I don't remember who gave this to me but it is superb
  5. Whisk in processor a few pulses so which the ginger gets minced. Boil for a few min until it thickens and pour over fried fish portions. Doubles very well.
