Filet mignon with blue cheese and spinach Recipe

This is such an easy meal but the presentation is terrific. I made it recently for my husband's boss who happened to be in town. It was fast, easy and delicious.

Directions

  1. Bring fillets to room temperature.
  2. Heat grill. Salt and pepper the filets. Lightly brush olive oil on sliced sour dough bread. If using a batard and slicing yourself. Slice fairly thin. (The bread is the bottom layer under the filet).
  3. Grill filets until desired result (medium recommended). When filets are almost done, toast the sourdough bread on the grill until lightly golden. Remove all from grill and let filets rest.
  4. Meanwhile, combine olive oil, lemon juice, chopped shallots and salt and pepper to desired taste. This is the dressing for the spinach. Once you have achieved the desired taste. Lightly dress the spinach in a bowl.
  5. Assemble:
  6. Place one toasted sour dough bread slice on each dinner plate. Sprinkle with crumbled blue cheese and top with filet. Top filet with spinach salad.
  7. The heat from the filet melts the blue cheese and slightly wilts the spinach.
  8. Enjoy! You can serve with a side of your choice of it can also be served as an entire meal.

    This is my favorite meat by far and also my favorite dressing and never thought of putting the two together; always looking for news ways to cook it, thanks for sharing, sounds really good.
