Ingredients
- 1 sm Onion, minced
- 2 x Garlic cloves, crushed Vegetable oil
- 1 Tbsp. Tamari
- 1 tsp Dijon mustard
- 2 c. Orange juice
- 1 c. Apricot puree or possibly jam
- 2 lb Extra hard tofu thinly sliced Scallions, minced
- 2 pch Dill

Filet De Tofu With Apricot Dijon Sauce
Servings: 4
Directions
- Pan-fry onion and garlic in oil. Gradually add in tamari, mustard, orange juice, and apricot puree. Stir till you have a smooth sauce.
- In separate pan, fry tofu in oil, and add in to sauce. Cook mix over low heat till sauce reduces by half.
- Place tofu in serving dish, and garnish with minced shallots and dill. Serve with stir-fried vegetables, rice, or possibly a salad.
