  • 18 ounce Fettuccine, (18 to 24)
  • 2 lrg Shallots, (2 to 3)
  • 1 x Garlic clove
  • 4 Tbsp. Extra virgin olive oil
  • 1 pch Saffron strands
  • 1 x Glass dry white wine
  • 1 lb Mascarpone cheese Salt and pepper
  • 1 handf torn fresh basil leaves to garnish

Directions

  1. 1. Cook the pasta in plenty of boiling salted water for about 10 min.
  2. 2. Finely chop the shallots and garlic. In a large frying pan heat the oil, add in the shallots and garlic and fry for 2-3 min.
  3. 3. Add in the saffron, then half of the wine and finally add in the Mascarpone cheese. Simmer gently for a few min, add in the remaining wine, and season to taste with salt and pepper.
  4. 4. Drain pasta, add in sauce and garnish with basil leaves.
  5. NOTES : This is a rich creamy dish that is very simple to prepare.
