This was a fun take on the traditional pho, my daughter Annie and I came up with, when I was attempting to teach her how to experiment with her cooking. No one was more surprised than she, when it became a favorite. I think it encouraged her to have more confidence in her cooking. It's a great warming soup, especially on a cold or wet day, but as it's quick to cook, it's wonderful any time of the year. Feel free to experiment with the recipe and make it your own.

Ingredients

  • 6 cups chicken stock or vegetable (not a tomato based veg stock) stock
  • 2/3 cup soba tsuyu
  • Salt to taste
  • 1 1/2 cups cooked chicken, small thin slices
  • 1 tbsp fresh ginger, grated
  • 3 large cloves of garlic, minced or pressed
  • 1 tbsp sriracha (you can add more later, to taste if desired).
  • 6 oz soba noodles, cooked
  • 1 large or 2 small sweet potatoes (about 3/4 pound), peeled and sliced about 1/4 inch thick (cut in half lengthwise first if fat)
  • 2 cups shredded cabbage
  • 6 oz baby spinach or baby bok choy (sliced), well rinsed
  • 1/2 cup green onions, white & pale green portions, sliced.

Directions

  1. Prepare the soba noodles according to the instructions on the package, drain, then hold colander of noodles under running cold water to halt the cooking process. Drain well, then distribute the noodles between four serving bowls and set aside. Bring the stock to a simmer, then add soba tsuyu, sriracha, garlic, ginger. Taste and adjust seasoning, adding salt, etc.. if desired. Add the sweet potatoes and cabbage, and simmer 10 minutes, then add the chicken and simmer 5 minutes until the vegetables are tender.
  2. Add the spinach or bok choy to the stock. Cover, and turn off the heat. Leave for three minutes. Ladle the soup into the bowls, taking care to distribute the vegetables and chicken evenly and prettily. Sprinkle the green onions over each bowl, and serve
  3. Serves four as a main dish
