.%3C/p%3E%3Cp%3EWe%20got%20back%20extremely%20late%20last%20night.%20I%20spent%20the%20day%20unpacking%20and%20baking%20a%20cake%20for%20an%20upcoming%20blogging%20event%20(stay%20tuned!).%20But%20for%20dinner,%20I%20chose%20to%20turn%20to%20one%20of%20my%20regular%20fallback%20meals%20for%20days%20that%20I%20am%20too%20busy%20or%20without%20fresh%20produce%20to%20make%20scratch%20meals.%20My%20family%20loves%20this%20dish;%20Sammy%20and%20I%20in%20particular%20never%20get%20sick%20of%20it%20and%20can%20eat%20it%20repeatedly.%20As%20a%20result,%20my%20pantry%20is%20stocked%20with%20the%20requisite%20canned%20soup%20so%20that%20I%20can%20make%20this%20easily%20when%20needed.%3C/p%3E%3Cp%3EWolfgang%20Puck%E2%80%99s%20Signature%20Tortilla%20Soup%20is%20an%20absolute%20must.%20But%20the%20bean%20soup%20is%20flexible.%20In%20the%20past%20I%20have%20used%20Amy%E2%80%99s%20Organic%20Black%20Bean%20Vegetable%20Soup%20but%20right%20now%20I%20am%20more%20likely%20to%20turn%20to%20Pacific%E2%80%99s%20lentil%20soup%20because%20I%20can%20get%20them%20in%20bulk%20at%20Costco.%20To%20these%20I%20add%20ground%20cumin%20and%20a%20heap%20(about%203/4%20cup)%20of%20Garden%20Fresh%20Gourmet%20Jack%E2%80%99s%20Special%20Medium%20Salsa%20(but%20your%20favorite%20tomato%20based%20salsa%20will%20work).%20I%20serve%20it%20with%20sour%20cream,%20Monterey%20Jack%20cheese%20(tip:%20serve%20it%20in%20tiny%20cubes%20instead%20of%20shreds%20to%20enjoy%20the%20melting%20blobs)%20and%20crumbled%20tortilla%20chips%20(my%20favorite%20are%20the%20Garden%20Fresh%20Gourmet%20blue%20corn%20tortilla%20chips).%20And%20we%20enjoy%20a%20fantastic%20dinner%20despite%20my%20having%20not%20done%20a%20lick%20of%20work!%3C/p%3E%3Cp%3Ebeans,%3C/p%3E%3Cp%3Ecorn,%3C/p%3E%3Cp%3Elegumes,%3C/p%3E%3Cp%3Elentils,%3C/p%3E%3Cp%3EMonterey%20Jack%20cheese,%3C/p%3E%3Cp%3Esoup,%3C/p%3E%3Cp%3Esouthwestern,%3C/p%3E){kind=link}
