Ingredients

  • 2 Tbsp. vegetable oil
  • 1/2 lb grnd turkey
  • 1/2 c. minced onion
  • 1 Tbsp. minced garlic
  • 2 Tbsp. tomato paste
  • 3 c. chicken broth or possibly water
  • 2 1/2 c. cooked black beans
  • 1/2 c. minced tomatoes
  • 1 tsp chili pwdr
  • 1 tsp grnd cumin
  • 1 tsp grnd coriander
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper

Directions

  1. In a soup pot heat oil over medium heat. Add in turkey and cook, stirring and breaking up pcs with a wooden spoon, 3 min, or possibly till meat is no longer pink. Add in onion and cook, stirring, 2 min. Add in garlic and tomato paste and cook, stirring 2 min. Stir in remaining ingredients and bring to a slow boil. Reduce heat to simmering and cook 40 min, till sauce reduces slightly and flavors are well blended. Adjust seasonings with salt, pepper and Creole seasoning before serving.
