Elizabeth David’s Christmas: potato, tomato and celery soup Recipe
Ingredients
- Potato, tomato and celery soup
- 4-5 sticks of celery (the outside ones if you have a whole head to use)
- 2 large leeks, trimmed
- 2 large potatoes, peeled
- 250 g ripe tomatoes, or a tin of tomatoes, drained
- 60 g butter
- 1 litre water (not stock!)
- salt
- 1 tsp sugar
- 2 egg yolks
- parsley or lemon thyme

.%20And%20like%20all%20of%20ED%E2%80%99s%20books%20it%20is%20designed%20to%20be%20read%20for%20pleasure,%20not%20just%20to%20cook%20from.%20I%20happily%20spent%20an%20afternoon%20lounging%20on%20the%20sofa%20by%20the%20fire%20reading%20it%20while%20my%20untended%20bread%20dough%20bubbled%20over%20the%20edge%20of%20the%20pan.%3C/p%3E%3Cp%3EHappily,%20the%20organic%20veg%20box%20provided%20all%20I%20needed%20for%20a%20simple%20soup%20of%20tomato,%20leek%20and%20celery.%20She%20writes%20%E2%80%9CThis%20is%20one%20of%20the%20most%20subtly%20flavoured%20of%20all%20these%20vegetable%20soups%20%E2%80%A6%20a%20good%20soup%20with%20which%20to%20start%20the%20Christmas%20dinner.%E2%80%9D%20It%20was%20indeed.%20Celery%20is%20something%20I%20don%E2%80%99t%20like%20as%20a%20vegetable,%20but%20as%20a%20herb%20it%20adds%20a%20nice%20peppery%20edge%20to%20soups%20and%20stews.%20My%20tail-end-of-season%20tomatoes%20weren%E2%80%99t%20the%20best,%20but%20they%20did%20the%20job%20%E2%80%94%20if%20I%20make%20it%20again%20at%20Christmas%20I%E2%80%99ll%20use%20tinned%20ones%20in%20preference%20to%20tasteless%20fresh%20ones%20(one%20day%20I%E2%80%99m%20going%20to%20start%20a%20campaign%20to%20ban%20the%20sale%20of%20fresh%20tomatoes%20between%20October%20and%20May).%3C/p%3E%3Cp%3EUnfortunately,%20the%20box%20also%20contained%20parsnips,%20for%20the%20third%20week%20in%20a%20row.%20So%20I%20decided%20to%20give%20her%20cream%20of%20parsnips%20and%20ginger%20with%20eggs%20a%20go.%20I%20got%20as%20far%20as%20cooking%20and%20mouli-ing%20the%20parsnips%20and%20adding%20the%20ginger,%20and%20the%20result%20tasted%20so%20unutterably%20foul%20that%20I%20almost%20threw%20it%20straight%20in%20the%20bin.%20We%20just%20had%20soup%20and%20cheese%20and%20biscuits%20that%20evening.%20I%20don%E2%80%99t%20think%20I%20can%20blame%20Elizabeth%20David%20for%20this%20though%20%E2%80%94%20I%20just%20don%E2%80%99t%20like%20parsnips,%20and%20somehow%20mashing%20them%20makes%20them%20taste%20more%20parsnippy%20than%20just%20roasting%20would.%3C/p%3E%3Cp%3EThis%20book%20will%20definitely%20stay%20in%20my%20collection.%20And%20it%E2%80%99s%20a%20good%20Christmas%20gift%20for%20foodies%20as%20well,%20a%20reminder%20of%20how%20truly%20good%20food%20writing%20is%20impervious%20to%20fashion.%20So%20much%20so%20that%20the%20modish%20soft-focus%20photos%20that%20the%20publishers%20obviously%20felt%20had%20to%20be%20in%20any%20modern%20cookbook%20are%20entirely%20superfluous.%20Elizabeth%20David%E2%80%99s%20words%20are%20enough%3C/p%3E%3Cp%3EClean%20and%20cut%20the%20vegetables%20into%20dice,%20and%20slice%20the%20tomatoes%20if%20using%20fresh%20ones.%20Melt%20the%20butter%20in%20a%20large%20pan,%20add%20the%20celery%20and%20leeks,%20and%20cook%20very%20gently%20for%20about%2010%20minutes,%20until%20the%20leek%20is%20getting%20soft.%20Do%20not%20let%20them%20brown,%20even%20if%20the%20phone%20rings%20while%20you%20are%20doing%20it.%20Add%20the%20potatoes%20and%20tomatoes,%20cover%20the%20pan,%20and%20cook%20very%20gently%20for%2015%20minutes,%20stirring%20occasionally.%20Then%20add%20the%20water,%20salt,%20and%20sugar.%20Don%E2%80%99t%20be%20tempted%20to%20use%20stock,%20because%20the%20whole%20point%20of%20this%20soup%20is%20the%20pure%20taste%20of%20the%20vegetables.%20Cook%20for%20about%20half%20an%20hour,%20cool%20slightly%20and%20put%20through%20a%20mouli.%20You%20can%20liquidise%20it%20if%20you%20want,%20but%20in%20my%20opinion%20soup%20containing%20tomato%20skins%20and/or%20celery%20benefits%20greatly%20from%20a%20mouli,%20which%20strains%20out%20the%20fibres,%20unlike%20a%20blender%20or%20food%20processor.%3C/p%3E%3Cp%3EYou%20can%20correct%20the%20seasoning%20and%20eat%20this%20just%20as%20it%20is,%20and%20it%20will%20be%20fine.%20But%20Elizabeth%20David%20suggests%20beating%20together%20the%20egg%20yolks%20and%20some%20of%20the%20hot%20soup%20in%20a%20bowl.%20Reheat%20the%20rest%20of%20the%20soup,%20stir%20in%20the%20egg%20mixture,%20and%20heat%20gently%20without%20boiling,%20until%20it%20has%20a%20rich,%20velvety%20texture.%20Garnish%20with%20chopped%20herbs%20to%20serve.%3C/p%3E){kind=link}
