Einstein Bros Bagels' Strawberry Cream Cheese Pie Recipe

Ingredients
- 1 ct strawberry cream cheese - (6 ounce)
- 1 pkt vanilla instant pudding - (3 3/4 ounce)
- 1 x nine-inch pie shell baked and cooled
- 8 ounce lowfat sour cream
- 1/4 c. cool lowfat milk
- 1 Tbsp. cornstarch
- 1/4 c. sugar
- 1 c. cool water
- 1 tsp strawberry-flavored gelatin
- 2 c. sliced strawberries - (heaping)
Directions
- Cream the cream cheese and lowfat sour cream. Add in lowfat milk and pudding; mix together till smooth (about 2 min). Pour into pie shell. Add in topping.
- For topping: Mix cornstarch with sugar in saucepan. Gradually add in cool water and bring to a boil, stirring constantly. After mix thickens and becomes clear, stir in 1 tsp. strawberry-flavored gelatin. Cold. Mix with 2 heaping c. of sliced strawberries and pour over pie. Refrigerateovernight.
