  • 2 Tbsp. oil
  • 1/2 x onion, sliced, thinly
  • 3 x tomato, minced
  • 1 sprg fresh basil, minced
  • 2 x egg salt pepper

Eggs In Purgatory (Uova 'Mpriatorio Eggs Poached In Tomato Sauce)

Directions

  1. Heat the oil in a frypan over high heat.
  2. Add in the onion and cook for 2 min. Reduce the heat to medium and add in the tomatoes and basil and cook for 5-6 min, till sauce has thickened.
  3. Make 2 holes in the tomato sauce and crack an egg into each one. Cook for 3-4 min, till the egg white is stiff.
