Eggless Christmas Plum Cake (Vegan recipe) Recipe
Ingredients
- Dry Fruit & Nuts - 3cups (I used a combination of almonds, pistachios, walnuts, dried cranberries, dried cherries, raisins and apricots)
- Orange juice - ½cup (If you don't want to use alcohol, use 1 cup of orange juice)
- Rum - ½cup
- Orange zest - 1tbsp
- Light brown Sugar - 1½cup (alternately use turbinado or regular sugar)
- Oil - 1cup (use any flavorless oil, I used canola oil but vegetable oil is a good substitute)
- All purpose flour - 1½cups
- Whole wheat flour - ¾cup
- Baking Powder - ½tsp
- Salt - ½tsp
- Ground Cinnamon - 1tsp
- Ground cloves - ¼tsp
- Ground Nutmeg - ¼tsp
- Soy Milk - 1cup
- Aple cider Vinegar - 2tbsp
- Baking Soda - 1tsp
- Vanilla Extract - 1tsp
