%3C/p%3E%3Cp%3EAfter%20my%20son's%20birthday%20cakes%20(Cookie%20cake%20&%20Dulche%20de%20Leche%20cake),%20I%20made%20this%20eggless%20berry%20cake%20for%20my%20niece.%20I%20was%20volunteering%20to%20bake%20cakes%20left%20and%20right,%20so%20I%20can%20bake%20new%20cakes%20for%20the%20marathon.%20I%20think%20some%20of%20my%20friends%20&%20family%20were%20even%20creeped%20out%20on%20how%20obsessed%20I%20was%20to%20bring%20a%20cake%20to%20the%20party%20--%20poor%20people%20;-)%3C/p%3E%3Cp%3EI%20asked%20my%20niece%20what%20flavored%20cake%20she%20wants%20--%20she%20wasn't%20really%20worried%20about%20the%20flavor,%20she%20just%20wanted%20a%20princess%20cake%20that%20was%20pink.%20So%20I%20accepted%20the%20challenge%20and%20even%20found%20a%20recipe%20and%20instructions%20on%20making%20a%20nice%20Barbie%20princess%20cake.%20Initially%20it%20seemed%20easy%20enough%20to%20make%20but%20as%20I%20kept%20thinking%20about%20it%20seemed%20like%20a%20daunting%20task,%20so%20I%20changed%20my%20mind%20and%20decided%20on%20making%20this%20Peppa%20Pig%20cake%20instead%20because%20she%20is%20a%20big%20fan%20of%20Peppa.%20Good%20that%20I%20didn't%20promise%20her%20a%20princess%20cake%20in%20the%20first%20place.%20She%20was%20definitely%20excited%20to%20see%20Peppa%20on%20the%20cake.%3C/p%3E%3Cp%3EThis%20Eggless%20Berry%20cake%20is%20adapted%20from%20Gayathri's%20eggless%20strawberry%20cake.%20Gayathri's%20cake%20is%20a%20beautiful%20pink%20cake%20with%20even%20more%20beautiful%20frosting%20and%20pearls.%20The%20big%20mistake%20I%20made%20was%20to%20use%20homemade%20mixed%20berry%20jam%20that%20made%20the%20cake%20purple%20colored%20instead%20of%20pretty%20pink.%20I%20almost%20cried%20looking%20at%20the%20color,%20but%20then%20I%20didn't%20have%20too%20much%20time%20for%20a%20redo.%20I%20went%20with%20it%20and%20covered%20it%20completely%20with%20frosting%20and%20fondant.%20I%20sprinkled%20some%20sugar%20syrup%20(equal%20parts%20sugar%20and%20water%20boiled%20for%20couple%20of%20minutes)%20on%20the%20cake%20to%20keep%20it%20moist%20and%20then%20decorated%20it.%3C/p%3E%3Cp%3EI%20frosted%20the%20cake%20with%20buttercream%20frosting,%20poured%20a%20chocolate%20ganache%20(2:1%20chocolate%20chips:cream)%20on%20top%20(to%20resemble%20the%20muddy%20puddle%20that%20Peppa%20loves%20to%20play%20in)%20and%20then%20added%20some%20fondant%20decorations.%20This%20was%20my%20first%20time%20working%20with%20fondant%20and%20I%20was%20quite%20excited.%20It%20wasn't%20as%20hard%20as%20I%20imagined%20to%20be.%20I%20bought%20Wilton%20ready-to-use%20fondant%20and%20colored%20it%20as%20needed.%3C/p%3E%3Cp%3EAll%20in%20all,%20a%20delicious%20cake%20(forget%20about%20the%20purple%20color)%20that%20attracted%20the%20kids%20and%20adults%20with%20its%20outside%20looks%20;-)%3C/p%3E%3Cp%3ERecipe%20adapted%20from%20Gayathri's%20Strawberry%20Cake:%3C/p%3E%3Cp%3EIngredients:%20Makes%201%208%22%20round%20cake.%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0F.%20Grease%20and%20flour%20a%208%22%20round%20cake%20pan.%3C/p%3E%3Cp%3EIn%20a%20mixing%20bowl,%20whisk%20flour,%20baking%20powder,%20baking%20soda%20and%20salt.%3C/p%3E%3Cp%3EIn%20another%20mixing%20bowl,%20beat%20butter%20and%20sugar%20together%20until%20light%20and%20fluffy.%20Add%20the%20jam,%20vanilla%20extract%20and%20sour%20cream.%20Mix%20well%20until%20combined.%3C/p%3E%3Cp%3EStir%20in%20the%20dry%20ingredients%20into%20the%20wet%20ingredients%20and%20mix%20until%20everything%20is%20incorporated.%3C/p%3E%3Cp%3EPour%20into%20the%20prepared%20pan%20and%20bake%20for%2025~30%20minutes%20or%20until%20a%20cake%20tester%20inserted%20into%20the%20center%20of%20the%20cake%20comes%20out%20clean.%3C/p%3E%3Cp%3ERemove%20from%20the%20pan%20after%205%20minutes%20onto%20a%20wire%20rack%20to%20cool%20completely.%3C/p%3E){kind=link}
