  • 4 lrg hard-boiled Large eggs minced
  • 6 ounce canned chunk light tuna in water liquid removed
  • 2 Tbsp. chopped red onion
  • 3 Tbsp. light mayonnaise
  • 2 Tbsp. Dijon mustard
  • 1/2 tsp freshly grnd pepper
  • 10 slc whole-wheat bread (1-oz)
  • 5 lrg red leaf lettuce leaves
  • 5 slc tomato (1/4-inch-thick)
  • 2 3/4 c. alfalfa sprouts

Directions

  1. 1. Combine the first 6 ingredients in a medium bowl. Spread 1/2 c. egg mix over each of 5 bread slices. Top each with 1 lettuce leaf, 1 tomato slice, 1/4 c. alfalfa sprouts, and 1 bread slice.
  2. Yield: 5 sandwiches.
