Edamame/Chickpea Guacamole

Ingredients

  • 1 cup frozen shelled edamame thawed or 1 can no salt chickpeas
  • 1 small ripe avocado
  • ½ cup of cubed tomatoes
  • ½ bunch of cilantro (optional)
  • ¼ white onion, chopped
  • 1/3 cup of lime juice
  • 2-3 tablespoons of water
  • Season to taste with salt & black pepper or Adobo seasoning (optional)

Directions

  1. In a blender or food processor add edamame/chickpeas, avocado, tomatoes, cilantro, onion and lime juice until almost smooth.
  2. Add water enough to create a creamy consistency and blend again briefly to texture.
  3. Chill before serving.
