Easy summer baller salad Recipe

This salad is sweet, zingy and refreshing and absolutely perfect served at a summer bbq party. You will need a melon baller to create equal sized ball shapes of the fruit and veg – this is so much more fun to do than the usual chopping! The melon baller is also quite easy to use, even if you’ve never used it before (like me!). You can chill the salad, without the dressing, for about 30 minutes and add the dressing just before serving.

  • Ingredients For the dressing
  • 150 g mozzarella pearl 1 tablespoon finely chopped fresh mint
  • 1 avocado 2 tablespoons good vegetable oil
  • 1 papaya, seeds removed 3 tablespoons lemon juice
  • 1/2 cantaloupe, seeds removed zest of 1 lemon
  • A piece of cucumber (about 20 cm long)
  • Salt and pepper to taste

Directions

  1. Do not peel the fruit and vegetables. Using a melon baller scoop out sphere shaped pieces of the fruit and vegetables. You should have a more or less equal amount of each ingredient. Combine, drizzle with the dressing, season and serve.

    Talk about eye-candy for the fruit-lovers out there! Colorful, healthy - this has it all. Perfect for summer. I am going to enjoy a melon ball session trying this out.
