Easy skillet cran-orange kale and radishes

Ingredients

  • 3 strips bacon
  • 12 radishes sliced thin
  • 1 small zucchini sliced thin
  • 3-4 cups chopped kale
  • Cran-orange balsamic vinegar
  • ( I use grapes and olives on tap brand)
  • Salt & pepper to taste
  • Avocado oil optional

Easy skillet cran-orange kale and radishes

Time: 5 minutes prep, 20 minutes cook
Servings: 3
 

Directions

  1. Cook bacon in skillet until crispy- remove bacon from pan - leave bacon fat.
  2. Add sliced radishes and zucchini to bacon fat in skillet , sauté til softened. Add kale toss and cook 3-5 min until kale is cooked down and evenly coated with bacon fat. ( May add avocado oil if additional oil is needed)
  3. Drizzle with cran orange balsamic vinegar. Crumble bacon on top, Toss and serve
