We love it topped with ice cream or whipped topping, but it’s always delicious with nothing. It’s creamy and delicious. I like to let it it set for a few hours before serving. Coconut Custard Pie
1 (9 inch) pie shell (You can make it or use a bought one)
3 eggs
3/4 cup sugar
1 2/3 cups milk (I used 2%)
2 teaspoons vanilla flavoring
Pinch of salt
1 cup coconut
Mix eggs, milk, sugar and vanilla and salt with mixer. Fold in coconut. Bake in preheated 400 degree oven for 45 to 50 minutes. Let it cool before serving, it will continue to set up. Enjoy!
