  • 2 onions, chopped
  • 1 teaspoon minced garlic
  • 2 green bell peppers, seeded and chopped
  • 2 stalks celery, chopped
  • 10 cups water
  • 1 (14 1/2 ounce) can chopped tomatoes with their juice
  • 3-4 pounds skinless, boneless chicken breasts, cut into pieces
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon cayenne pepper
  • 1 pound reduced-fat sausage, sliced into 1/4-inch pieces
  • 1 bunch green onions
  • 1 tablespoon Worcestershire sauce
  • Cooked brown rice for serving
