Easy Cherry Coffee Cake is a delicious, super moist and easy recipe for breakfast or brunch. It could also be used as a dessert and perfect for a snack. Directions

  1. Preheat oven to 325° F. Combine the 1 cup sugar and softened butter in a large bowl. Beat at medium speed, scraping bowl often, until creamy. Add sour cream, eggs and vanilla; continue beating until well mixed. Reduce speed to low; add in the 2 cups flour, baking powder, baking soda and salt. Beat until well mixed.
  2. Spread 1/2 of the batter into a greased and floured 13 x 9-inch baking pan. Spoon cherry pie filling over batter. Spoon remaining batter over pie filling; spread carefully.
  3. Stir together the 1/4 cup flour, 1/4 cup sugar, pecans and cinnamon in a medium size bowl. Cut in the 3 tablespoons butter until mixture resembles coarse crumbs. Sprinkle crumb mixture over batter. Bake for 45 to 50 minutes or until toothpick inserted in center comes out clean and topping is dark golden brown. Sprinkle powdered sugar over top if desired. Cut into 15 equal sized servings.
