Easy breezy rice bowl

Ingredients

  • I package Trader Joe’s frozen brown rice
  • 1/3 bag Trader Joe’s frozen vegetable medley (of your choice)
  • Protein: cooked chicken, pork, steak, tofu, or tempeh
  • Chopped tomatoes, avocado
  • Roasted seeds or nuts
  • 1 poached, fried, or soft-boiled egg
  • Sriracha mayonnaise: Best Foods mayo, Sriracha to your preference, minced garlic or garlic powder, squirt of lemon juice
  • Tahini sauce: lemon juice, garlic, and yogurt whisked into tahini

Time: 15 minutes prep, 10 minutes cook
Servings: 4
 

Directions

  1. Microwave 1 cup frozen vegetables
  2. Microwave frozen brown rice
  3. Mix together with squirt of tahini sauce.
  4. Top with chopped protein, diced tomatoes, diced avocado, seeds or nuts, and egg.
  5. Top with Sriracha mayo and tahini sauce
