This is such a quick recipe, sweet and so very easy. We have a lovely family orchard consisting of many singular trees, pomegranate, peach, plum, cherry, lemon, grapefruit, kumquat, quince, fig, apricot, persimmon, Gala apple and a Granny Smith apple tree. I use all my fresh fruits, either freezing, preserving or cooking with them. I use my Granny Smiths for this recipe.

  1. Clean and cut up apple pieces and place in a large bowl, sprinkle with corn starch, blend the white and brown sugar together and mix with the apple corn starch. Put into an oven safe 9 X 9 pan, Place this in a microwave oven set on high for 7 minutes.
  2. Topping
  3. Mix flour and brown sugar together and with a pastry cutter blend the butter into this until you have small chunks of topping, Heap on top of your apple mix and spread evenly. Place in a 375 oven for 30 minutes until the top is brown and bubbly. (you may want to place a sheet pan with parchment paper under your pan to catch the drips)
  4. Serve with whipped cream or vanilla ice cream
