Ingredients

  • 1 x leg of lamb (short cut, bone-in) about 2 1/4 - 3 lbs garlic fresh or possibly dry rosemary salt pepper

Directions

  1. Cut slits in skin of lamb leg; insert slivers of fresh garlic. Sprinkle with crushed dry rosemary leaves, salt and freshly grnd black pepper.
  2. Preheat oven to 450 F. Put lamb in a small open roasting pan; roast for 10 min.
  3. Reduce heat to 325 F. Continue roasting for about 25 min per lb. plus an additional 20 min. Let stand, covered with foil, for 15 min while making pan gravy.
  4. Meat will be pink at bone.
  5. Serves 3-4 persons. Good with mashed potatoes and a mix of carrots, peas and turnip. (RWF)
